(一)研究背景
随着社会的发展,我国市场经济体制日益完善,全球文化交流日益频繁,人们的审美品味及日常需求逐渐提高。饮食方面逐渐成为了一种文化消费,顾客在品尝美味佳肴的同时也开始关注对于就餐周围的环境与其营造的特殊氛围这一方面。另外加上业内竞争的日趋激烈,产品的雷同、消费者需求多种多样,寻求的目的情感不一,从而主题化、特色化的餐厅成为一种餐厅设计主题发展的方向。根据这一背景,研究餐厅设计风格与客流量的关系。
(二)研究意义
餐厅环境的营造表现形式丰富多样,民风民俗、历史故事、文化传统,甚至宠物题材都可以是设计思路的来源。从人类的社会文化属性来说,就餐的过程通常都与文化观念有一定的相关性,消费者会希望饮食的环境符合自己的境地与情感。通过一定的设计理念打造出迎合餐饮市场,满足于餐饮市场中人们选择的品味,这是餐饮空间设计表现的重要因素。对于长期生活中的人们的认知程度与美感体验,对餐厅的认知有一定的固定性,总是会根据以往的经验来评判环境,显然,这样对于餐厅的环境太不公平。通过设计某一个主题或者改造布局,或者是通过对灯光的设计,让人产生"移情",然后产生餐厅与人之间的共鸣,无论在哪个角落都有美的享受。通过对主题餐饮空间设计的大量研究调查发现,在餐厅空间的规划设计中,注重消费精神世界的需求,能获得更为舒适的感受,这也更好的为我们这次研究做了充分的支持,餐厅设计风格的好坏直接影响到客流量的大小。像主题餐厅的内在价值要超过它的实际价值,它是消费者精神文化的物质载体。餐饮空间设计与餐厅内空间布局,是可以成为城市的一张明星片,更好的宣传餐厅的同时也为这座城市点亮了自信,感受地域性的特色餐饮,所以餐饮空间的主题性设计有着一定的地域性和时代性。
