银耳山药莲藕汤工艺优化
银耳、山药、莲藕都是在人们餐桌上常见的食物,它们不仅味道鲜美,而且还含有丰富的营养物质和有很高的药用价值,它们都是公认的保健食品。随着社会的发展,人们对于食品的需求不光是吃饱,还有吃好,人们需要有营养,对身体健康有帮助的,还要色香味俱全的食品。而银耳、山药、莲藕恰好满足人们对于健康食物的需求。本实验内容是研究银耳山药莲藕汤加工工艺,以汤的可溶性固形物含量和感官品定为优化指标,以煮制汤的温度,时间和料液比为优化因素进行工艺优化,确定最佳生产工艺,测定产品营养物质蛋白质,总糖和脂肪的含量。研究结果是在汤的煮制温度是110℃,时间45min,料液比1:5时汤的感官评分最高,可溶性固形物含量最高。测定汤每100g蛋白质含量是0.66g,每100g总糖含量0.52g,每100g脂肪含量是0.14g。

s but also rich in nutrients and have high medicinal value. With the development of society, people need not only full food, but also good food. Tremella, yam and lotus root just meet peoples needs for healthy food. The content of this experiment is to study the processing technology of Tremella yam lotus root soup. The content of soluble solids and sensory products of the soup is taken as the optimization index to make the soup temperature. Time and the ratio of material to liquid were optimized to determine the optimum production process and to determine the content of nutrients, protein, total sugar and fat in the product. The results showed that the cooking temperature of the soup was 110 ℃, the time was 45 min, the sensory score of the soup was the highest and the content of soluble solids was the highest at 7:25. The protein content per 100g, total sugar content per 100g, fat content per 100g were 0.66g, 0.52g and 0.14g respectively.

银耳也称作雪耳、银耳子等,银耳是真菌类,银耳又被叫做有“菌中之冠”[1]。银耳子的实体呈白色或者乳白色,子实体洁白而透明且富有纯弹性。银耳的味到微甜而平淡,银耳没有毒性。银耳有清肠润肺和开胃补脾的作用,银耳能提高人体免疫力,可以提高肿瘤患者对放化疗的耐受力[2]。银耳含有丰富的天然胶质,并且有滋阴作用,所以银耳长期服用有润肤作用。根据研究发现世界各地遍布的银耳大约有四十多种,银耳大部分都生长在各种阔叶树或针树腐烂处。只有少数生长在土壤上和寄生在其他真菌上[3]。
银耳中含有丰富的物质,目前的研究中检测出来是,蛋白质、脂肪、粗纤维、矿物质、水分及少量维生素类,还含有少量糖类[45]。(如下表)
