大学生创业小微餐饮企业供应链绩效分析与评价[20200418172102]

随着创新时代的到来,大学生创业潮流蓬勃兴起,餐饮企业又是大学生创业首选的行业,而餐饮企业数量多,竞争非常激烈,且大学生初步踏入社会,没有管理经验,因为某个环节的处理不当就会导致成本增加,进而降低效益。为了解决这些问题,就需要进行供应链绩效评价。通过绩效评价可以发现供应链中存在的问题,才能优化供应链,从而获得供应链竞争优势,提高整个供应链运作效率和绩效。
为了更好的对小微餐饮企业的供应链绩效进行评价,本文在小微餐饮企业供应链特点的基础上,结合了国内外关于供应链绩效评价模型和具体指标的相关研究,构建了大学生创业小微餐饮企业的供应链绩效评价框架体系。
本文主要对小微餐饮企业的供应链绩效评价体系进行探讨,充分考虑小微餐饮企业的内部特征,利用平衡积分卡模型和层次分析法,从整体框架和具体指标两方面建立以内部供应链为核心的绩效评价体系,从多方面来评价供应链绩效,为小微餐饮企业的供应链绩效评价提供了一些新的方法,以提高企业的竞争能力。
ABSTRACT
As the coming of the creation time, it has been a trend that staring businesses by their own for graduates. Among all kinds of businesses, catering usually tends to be the first choice. However, catering companies are so many that they are very competitive. And graduates just come upon the social stage, the lack of management experience often results in some mistakes. If some parts are dealt wrongly, the cost would be increased, and then the profit would be reduced. To solve these questions, it’s necessary to make supply chain performance appraisal. By performance appraisal, we can find questions in the supply chain, optimize supply chain, grasp market’s requirement, and then get advantages in the contend of supply chain, increase performance and efficiency of supply chain operation.
To made performance appraisal for micro and small catering better, this passage constructed a frame system of catering’s supply chain performance appraisal for graduates starting a business. Many scholars had studied the system of supply chain performance appraisal index and made some models at home and abroad. After combining these researches, these passage got this system on the basis of the features of micro and small catering’s supply chain.
This passage mainly discussed the system of micro and small catering’s supply chain performance appraisal. Considering the internal features of micro and small catering, we constructed this performance appraisal system by Balanced Scoreboard and AHP. As internal supply chain as core, this system appraised supply chain performance completely from two aspects including frame and specific index. As a result, it would provide some new methods for micro and small catering’s supply chain performance appraisal to improve competitiveness.

当今社会就业压力巨大,很多大学毕业生选择创业就业,由于餐饮好入手,好经营,小微餐饮企业成为炙手可热的创业选择。但是小微餐饮企业的主体一般是没有经验的毕业生,他们初入社会,没有管理经验,使创业企业不得不面临较高的成本,与其他企业相比就会失去竞争优势。因此创业餐饮企业就需要通过供应链管理,改造供应链流程,变革经营管理理念,增强供应链的竞争优势,进而增强创业餐饮企业的竞争优势。
